]]>I might not be much of a football fan, but I am a fan of football food.
Whether it’s a big platter of bacon-wrapped little smokies, a skillet of pizza dip, or a batch of deviled eggs, I love all of the snacks.
Sliders are one of my favorite things to make for game days or for easy dinners. They’re quick and easy to throw together, there are a ton of variations you can make, and they’re always a hit.
My newest favorite version? These cheesy roast beef sliders. If you love those fast-food beef and cheddar sandwiches, then you’re gonna go nuts for this recipe.

If you saw my post from earlier this week, you know that I’ve been getting bombarded with TikTok videos about the new quesadilla “hack” at Chipotle.
Some of the videos are of people trying the quesadilla and raving about how good it is, but other videos are of people saying that their local Chipotle restaurants are refusing to make the quesadillas.
Plus, all of the videos have made a lot of Chipotles run out of their signature Chipotle honey vinaigrette.
If you’ve been wanting to try the quesadillas but haven’t been able to (or you’re just wondering what everyone is talking about), don’t stress. We’re going to learn how to make a copycat version at home!
This is one recipe that is definitely going into my “TikTok hall of fame” along with cinnamon rolls with heavy cream and the TikTok grinder sandwich.

This is the time of year in the Midwest when we all just want winter to be over. Unfortunately, we still have at least a couple more months to go.
My solution when I can’t stand the gray winter days any more is to make lots of comfort food dinners. Things like crockpot Mississippi pot roast, homemade sloppy joes, chicken and wild rice soup, and spaghetti and meatballs.
There are so many ways to make and cook meatballs, and one of my favorites is to cook them in the air fryer. Air fryer meatballs are crisp on the outside, moist and tender on the inside, and so versatile to use!

]]>There’s finally a crisp chill in the air in the mornings and the leaves are starting to turn, so you know what that means: fall is officially here!
It’s time to curl up with a slice of pumpkin bread, make a batch of slow cooker apple butter, and shop online for new sweaters.
It’s also tailgating season, and while I am not out here tailgating on a regular basis, I know a lot of people who are and they’re always looking for fun game-day foods.
Luckily, one of our new weeknight meals is also a perfect game-day snack. These meatball sliders are my newest slider recipe and are perfect for all the meatball sub fans out there.

]]>As I’ve mentioned before, Eric and I both work from home, which to many of my friends is their worst nightmare.
I often get the “You mean you’re together 24 hours a day, 7 days a week?” stare that awaits a series of verbal gripes, but truth is, it’s not bad at all. We both have our own work spaces and are able to balance our schedules pretty easily.
But despite both of us being home all day, every day, our meal planning game is most definitely not on point.
Unless we’ve got Mississippi pot roast or Italian beef bubbling away in the slow cooker or pulled pork ready for the Instant Pot, one of us is either scanning the pantry or running to the market around 5:00.
It’s just the way we roll around here.
One of our favorite on-the-fly meals happens to be these simple homemade sloppy joes. They come together super quickly, require minimal ingredients, and they pair perfectly with just about anything.

I know that when you’re rushing from school pickup to sports practices or ballet or piano lessons, dinner is often the thing that gets forgotten about. But sooner or later, we’ve all gotta eat, ok?
So recipes like my Mississippi pot roast, homemade meat sauce, chicken pot pie casserole, taco casserole, and so many more are easy to turn to for a hearty weeknight meal.
These homemade meatballs are the latest on that list. They take a little bit of time to assemble, but are great for making in batches and freezing for later. I’ll walk you through how to do it!

]]>Is there anything more comforting than a casserole?
Maybe it’s just because I grew up in the Midwest, but casseroles are total comfort food to me. Whether it’s Jiffy corn casserole alongside a holiday meal or cheeseburger tater tot casserole or chicken spaghetti casserole for a weeknight dinner, casseroles just make me happy.
This taco casserole is my family’s latest favorite. It’s a 30-minute meal that I can quickly make on a weeknight and we can all add our favorite toppings to it.
What could be better than that?

]]>When Elle was little, she went through an anti-casserole phase. She would happily eat meals like Homemade Sloppy Joes or Ritz Cracker Chicken, but having all her food in one pot sort of freaked her out.
And man, did I really miss casseroles during that time.
There’s just something about casseroles that makes them so comforting to me. Plus, casseroles are such a game changer when you’re trying to better your dinner game in the midst of a hectic schedule.
So I was pretty excited when I finally got her to try this Cheeseburger Tater Tot Casserole and she loved it! It’s been a weeknight dinner go-to around here ever since.

]]>I don’t know if I’ve mentioned this before, but we got a Blackstone griddle for Christmas from my dad and stepmom. If you happen to ever find yourself on the food side of TikTok, you know the hype.
I mean, come on, hibachi at home? Breakfast for 10 people made all at one time? Yes, please. I promise you, the hype is real.
We absolutely love our Blackstone. So much so that we gave our new-ish gas grill to my mom because we just weren’t using it enough to justify the space it was taking up.
Only we haven’t been able to use the Blackstone much in recent weeks because it’s done nothing but rain here in Ohio. So it was back inside the kitchen to cook easy summer dinners like this One-Pot Spaghetti.
