Tip 1: Read Recipe
Read and get an understanding of recipe before you bake. You should not attempt baking without reading recipe first, unless you have baked recipe several time before.
Tip 2: Mise En Place
Mise en place is a French term referring to having all ingredients necessary for a dish prepared and ready to combine up the point of cooking. This is a great definition from The Food Lover’s Companion book. The dry ingredients and liquids should be measured and place in a bowel or measuring cups. I prefer placing the weight ingredients by mixer so do not miss any ingredients.
Do not forget to prepare your baking pans with pan spray or grease dusted with flour. I prefer using Baker’s Joy pan spray. I have made it practice to prepare my baking pans first because I have made this my first step in mise en place because I have a tendency to forget the pans until the end.
Tip 3: Room Temperature
Allow all cold ingredients to come to room temperature because it makes the mixing process easier. A good tip to know if butter has reached room temp is to press your finger on wrapped butter. If your finger leaves an indention, the butter has come to room temp. Usually it takes 45 minutes for all ingredient to come to room temperature but it can be less or more depending on the temperature of your kitchen.
Tip 4: Quality Flour
Buying a quality brand flour all-purpose flour or cake flour verse off brand makes a difference in the lightness and fluffiness of cake. My personal favorites are Gold Medal All Purpose flour and Swan’s Down Cake flour.
Tip 5: Practice
Just like any skills you want to perfect you have to practice. My suggestion is to pick a cake you like to bake such as a chocolate cake. Bake it several time until you get it down pack. Then perfect another cake.
